Gordo’s Cantina is preparing to open at 209 N. Park St. in Chewelah, according to a recent Washington State Liquor and Cannabis Board license application. The new restaurant is owned by husband-and-wife team Jose and Michele Gonzalez, who also operate Cantarito Mexican Restaurant in Spokane.
The application seeks approval for on-site beer, wine, spirits, and cocktails, as well as premixed cocktails and wine to go.
While an opening date has not yet been announced, the restaurant is planned for the former El Ranchito location, which previously served traditional Mexican cuisine, margaritas, and other beverages before closing.
Jose Gonzalez brings more than two decades of experience in the restaurant industry. Originally from Panama, he and Michele opened Cantarito with the goal of introducing diners to both traditional Mexican and Latin American cuisine.
Over the years, the couple has focused on creating a neighborhood gathering place. Michele, a Spokane native, contributes her background in Spanish language and Hispanic culture, while Jose oversees the culinary vision inspired by his Panamanian heritage and years of experience in Mexican restaurants.
It has not yet been announced whether Gordo’s Cantina will follow a similar culinary direction or introduce a different concept. However, the owners’ background suggests diners can expect a team with an established foundation in Latin American cuisine and hospitality.
