Known for their loaded potatoes and barbecue plates, the Gator Grub catering team are preparing for a permanent home in St. Bernard Parish at 2001 E. Judge Perez Dr. The space is currently undergoing inspections and minor renovations. A soft opening is being planned for mid to late August.
Owner Jordan Sanchez told What Now New Orleans that the transition to a physical storefront feel a natural step, given he and his wife have spent years working in fast-paced, high-volume local kitchens.
“We’ve worked for other people in The Quarter,” Sanchez said. “We figured, since we’ve helped run multi-million-dollar businesses, what if we tried our hand at it?”
For Sanchez, opening the Gator Grub spot in the parish feels like a homecoming. He added that the upcoming spot will to contribute to a local culinary landscape he knows so well.
“We’re from St. Bernard Parish, it’s right up the street from where I grew up,” he said. “A lot of people are spending their money on Wendy’s and Cane’s and McDonald’s and spending $30 to $60 on four people. We’re trying to make better food for that price, basically give them a better option.”
While a barbecue setup is part of the long-term plan, the opening menu will include the truck’s signature loaded potatoes, such as Oysters Rockefeller and crawfish etouffee potatoes. The restaurant will also have specialty burgers and “loaded dogs,” including a muffuletta hot dog. To wash it all down, the restaurant will have soft drinks, including a signature Gator Blood punch.
Looking ahead, there are plans to use an additional area for private events and parties. Sanchez hopes to expand the menu to include dedicated barbecue nights and a weekend brunch menu.
