ZIBO!, a Quebec-based restaurant bar serving California-inspired cuisine, is coming to Quebec City at 5401 Bd des Galeries as part of a major redevelopment at Galeries de la Capitale.

The restaurant will join L’Imaginaire and several other retailers and restaurants in a new commercial wing being created inside part of the former Hudson’s Bay store, according to Silo57. ZIBO! will occupy the second floor of the new wing, with the commercial spaces expected to come into operation gradually in 2027. Construction and redevelopment work are already underway, with ZIBO! listed among the shopping centre’s upcoming tenants, along with Café Van Houtte.

ZIBO! describes its menu as California-style cuisine inspired by the region’s approach to food and lifestyle. The menu includes salads, burgers and sandwiches, grilled meats, fish, pasta, pizzas, and desserts. The restaurant also offers signature cocktails, wine, sangrias, and beer.

The company’s website says ZIBO! bar restaurants are designed around a lively and welcoming atmosphere, with options for different occasions, including family outings, dinners with friends, happy hour, and business meals. Customers can choose between dining room and bar seating, with the restaurant emphasizing fresh ingredients and a selection of dishes prepared by its team. The menu also includes a selection of wines.

ZIBO! traces its history to 2001, when the ZIBO! Group opened its first restaurant in Rosemère. The Quebec-based company has since grown to more than ten establishments under its ZIBO! and Vertigo restaurant bar concepts, with its headquarters in Mirabel. The group also operates Alimentation Eureka, a food processing plant that supports its restaurants.

The ZIBO! Group says its growth is supported by a team of more than 700 employees. Quebec entrepreneurs founded the company, which initially saw strong demand at its first Rosemère location, later relocated to Faubourg Boisbriand in 2014. The new Quebec City location will add ZIBO! to the redevelopment at Galeries de la Capitale, alongside L’Imaginaire, whose new store will cover 30,500 square feet.
