Pablo Becker Planning Two New Barrio Logan Eateries

Santo Poco and Concrete Cowboy are both expected to open before the end of the year

Santo Poco and Concrete Cowboy, two new restaurant concepts from Fish Guts owner and chef Pablo Becker, are getting ready to open in San Diego’s Barrio Logan at 2222 Logan Avenue and 2219 Logan Avenue, respectively.

Santo Poco is planned for the space upstairs from Fish Guts and is scheduled to open in October 2026, while Concrete Cowboy is planned for the former Lia’s Lumpia location across the street and is expected to open in November 2026, according to San Diego Magazine. Santo Poco will be a lunch-only sandwich operation focused on takeout and delivery rather than dine-in service. Concrete Cowboy will focus on tacos featuring meats such as duck confit, ribeye, pork belly, and skirt steak.

Becker currently operates Fish Guts in Barrio Logan, which opened in 2023 and specializes in fish tacos. The small restaurant seats roughly two dozen people at a time and has received San Diego Magazine recognition for its fish tacos, including Critic’s Pick honors in 2024, 2025, and 2026. One of its featured tacos is the blackened swordfish, or “de espada,” taco.

Concrete Cowboy will take a taco-focused approach, with menu plans centered on meats including duck confit, ribeye, pork belly, and skirt steak. His father’s fascination inspired Becker’s concept for the restaurant with the American West and cowboy culture. Dane Danner is designing the new spaces and their visual branding.

After Concrete Cowboy opens, Fish Guts will temporarily close for remodeling. The restaurant is expected to return with a warmer interior and an updated menu, while Santo Poco and Concrete Cowboy will introduce two additional Becker concepts in the same Barrio Logan area.
