Set to spin off from the highly successful Caroline’s Cookies, Bagels in Lafayette will add another artisanal option to the city’s bustling River Ranch development. The bagel shop will feature a scratch kitchen, with bagels boiled and baked daily. In addition to popular bagels and spreads, the menu will reportedly include a variety of signature breakfast and lunch sandwiches alongside real-fruit smoothies. The team behind the project aims to fill a void in the local market for fresh, artisanal bagels that utilize locally sourced ingredients. What Now New Orleans has reached out for more information.

The venture marks the latest expansion for young entrepreneur Caroline Merryman, the founder of Acadiana sensation Caroline’s Cookies. Merryman, who launched her cookie empire in Lafayette as a teenager and has since expanded into the Baton Rouge market, is joined in this project by her brother, Reece Merryman, and longtime collaborator Ashlyn Fruge. Construction is reportedly underway, and an official opening date has not been announced.
