Koshari is searching for a permanent restaurant space after leaving its shared location inside Salt & Sugar Cafe in Ballard. The restaurant served its final meals there on August 15 and has paused regular service during the search.
Amani Almasri, who owns Koshari with her husband, Ayman Almasri, told What Now Seattle that they had identified a possible location, but the plans did not advance.
The owners have not selected another address or announced when regular service could resume. Catering remains available for private and corporate events.
Amani and Ayman launched a GoFundMe campaign to help cover the cost of opening a permanent restaurant. The campaign has a $30,000 goal. The owners plan to use the funds for permits, licensing, required construction work, kitchen equipment, signage, furnishings, and opening inventory.
Koshari began at local Seattle markets in 2023 before starting an evening residency at Salt & Sugar.
The family-run restaurant built its menu around vegetarian dishes from Egyptian and Lebanese culinary traditions.
Its signature Cairo Street Koshari Bowl contains rice, lentils, elbow macaroni, garbanzo beans, sauce, and house-made fried onions. The online menu also lists falafel, ful medammas, maghmour, fattit-hummus, sandwiches, and vegan baklava.
