Nick's Restaurants plans new steakhouse concept at River Street Marketplace

Cowboy by Nick’s is slated to open at River Street Marketplace in San Juan Capistrano, taking over the space at 31904 Paseo Adelanto. The new restaurant is scheduled to open in fall 2026, according to River Street Marketplace, while the Cowboy by Nick’s website currently lists the concept as Coming Soon.

Cowboy by Nick’s will focus on fire-cooked steaks, cocktails and a Western-influenced dining concept. The forthcoming restaurant will occupy space within River Street Marketplace, a mixed-use destination in San Juan Capistrano that includes restaurants, retail businesses, and other food and beverage concepts.

The restaurant’s menu will center on steaks prepared over fire. The concept also highlights cocktails, including classic preparations such as an Old Fashioned. River Street Marketplace describes the restaurant as offering fire-kissed steaks and crafted cocktails within a Western-inspired setting. Cowboy by Nick’s is part of the broader expansion of Nick‘s Restaurants, a California restaurant group with locations throughout Southern California.

The company’s existing concepts include Nick’s, South of Nick’s, and other restaurant projects. The opening will add another full-service restaurant to River Street Marketplace, which currently features several dining concepts. The marketplace’s dining directory includes Finca, Mendocino Farms, Ubuntu Café, Capo Leisure House, and other restaurants and food businesses, along with Cowboy by Nick’s listed as an upcoming fall 2026 addition.
