Potbelly Sandwich Shop has officially opened its first New Braunfels location at 323 Creekside Crossing, Suite 105, bringing its toasted sandwiches, soups, salads and other menu favorites to the growing community.
The Chicago-based sandwich chain is located at Town Center at Creekside, a shopping and dining destination serving residents and visitors in the New Braunfels area. A grand-opening celebration is planned for November 6.
The new restaurant occupies approximately 1,750 square feet, according to records filed with the Texas Department of Licensing and Regulation. The project involved an estimated $425,000 in renovations to prepare the space for Potbelly’s restaurant concept.
Potbelly is known for its toasted sandwiches, made with a selection of meats, cheeses and toppings. Its menu also includes wraps, salads, soups, fresh-baked cookies and hand-dipped shakes.
Customers can order meals for dining in, takeout or delivery. The brand also offers catering for gatherings, office lunches and other group occasions.
Potbelly’s story began in 1977, when founder Peter Hastings and his wife started serving sandwiches at their antique shop in Chicago’s Lincoln Park neighborhood. The sandwiches became popular with customers, eventually inspiring the business to grow beyond its original setting.
Entrepreneur Bryant Keil acquired the shop in 1996 and expanded the concept. Potbelly later began franchising in 2009, helping the brand reach more communities across the country. In 2025, RaceTrac acquired Potbelly, opening a new chapter for the sandwich chain.
The New Braunfels restaurant adds to the selection of dining options at Town Center at Creekside, where Potbelly joins other national restaurant and retail businesses.
