Sourdough & Co. is continuing to enlarge its footprint in the Las Vegas Valley. According to a spokesperson for the beloved fast-casual sandwich brand, a new Sourdough & Co. shop is expected to open at 7017 Spring Mountain Rd. in the Rainbow Springs Shopping Center by early Spring 2027.

At the helm of the opening is Sourdough & Co. Las Vegas franchisee Inder Judge. What Now Las Vegas briefly spoke with Judge, who confirmed the opening. Unfortunately, he was unable to share further details by the time of this publication.

“The Sourdough & Co. trademark of quality starts with our signature sourdough bread,” the Sourdough & Co. website reads.

“A Bread with Benefits! What you add next makes it special for you and our customers become part of our story.”

And it’s quite a story to tell!

Steve Presson and Gordon Ross founded the brand in Greater Sacramento, California, in 2014. The fast-casual concept started in Sacramento, focusing on San Francisco-style artisan sourdough bread baked fresh daily, along with sandwiches, soups in sourdough bread bowls, and salads. The brand operates on a “restaurant running as a sandwich shop” model, using a team-based assembly process for faster service and signature bread baked from a long-standing yeast culture.

“Top quality pastrami, roast beef, premium turkey and chicken, sliced thin and laid thick on every sandwich. Crisp, fresh produce for every sandwich and salad and warm, savory premium-quality soups, especially good in our Sourdough & Co. bread bowl,” the brand’s website reads.

“At Sourdough & Co. you’ll always receive friendly, accommodating service. We are here to serve our patrons with the best of product, service, and attitude that will invite you back again and again.”

The booming eatery transitioned to a formal franchising model in 2022 and rapidly expanded across the West and Midwest. The company now has roughly 92 open Sourdough and Co locations across several states, with a strong cluster in California and Nevada.

According to the company’s website, the Spring Mountain opening will be the sixth in Las Vegas. Sourdough & Co. has two locations in Henderson, with one serving the Sparks/Reno area.

Try it out for yourself when the new Sourdough & Co. opens at 7017 Spring Mountain Rd. in the Rainbow Springs Shopping Center by early Spring 2027.
