Highland Bakery will open its third Metro Atlanta location in the shuttered Starbucks space on street level of the Atlanta Financial Center.

Located at 3343 Peachtree road, the space Highland Bakery will occupy was one of the locations Starbucks decided to close when they started making cutbacks.

Expected to open by the end of January 2011, company spokesperson, Jamie Annarino said this will probably be the last location for the brand.

“Owner Stacey Eames likes to be in the kitchen producing the food Highland Bakery serves.”

Annarino added that the location at the Atlanta Financial Center will mimic the Midtown concept at the SunTrust building. The menu will be retrofitted and will mostly include soups, salads and sandwiches.

Highland Bakery’s catering service is their main source of business and the Buckhead and Midtown locations will act as “satellite kitchens” to expedite the catering process, according to Annarino.

Cake designers for Highland Bakery, Karen Portaleo and Joshua John Russell, continue as regulars on the Food Network.
