Walk-Up Taco Window From Yumbii Team Coming Soon to Piedmont Heights

The Queso Shop, 'inspired by the rise of ghost kitchens and virtual restaurants during the pandemic,' will debut in early 2021

The Queso Shop, a new kitchen from the team behind Yumbii and The Queso Truck, will open in early 2021 for online ordering, delivery, and walk-up service in the Piedmont Heights neighborhood, according to a press release Friday. Beginning next Wednesday, December 9, ahead of the window’s opening, The Queso Truck will park outside the forthcoming window, at 2127 Liddell Drive, and serve a preview of The Queso Shop’s menu of queso, tacos, quesadillas, churros, salsas, sides, and family meals. It was “inspired by the rise of ghost kitchens and virtual restaurants during the pandemic.”

Guests of The Queso Shop can expect an “approachable” menu with Tex-Mex and Cali options from The Queso Truck, like Carne Asada or Pork Belly Tacos and Quesadillas, plus “healthy-ish” items like the Mexican Chopped Salad with chopped kale, avocado, radish, pumpkin seed, cilantro, blackened corn, queso fresco and avocado-lime crema. A Mexican Rotisserie Chicken Family Meal will also be available to serve groups of three to four, and the beverage menu will feature to-go margarita mix and other non-alcoholic beverages. There will also be a “secret” menu with a Surfer’s Burrito and Loaded Crispy Tots.

Designed by Atlantan Lindsay Denman, the walk-up window will mimic the “California cool” aesthetic from Yumbii’s storefronts, while tying in The Queso Truck’s color scheme of pink, orange, green and black. The Queso Truck will be open Wednesday through Sunday from 11 a.m. to 2 p.m. and 5 – 9 p.m.

“During the pandemic, we saw the rise of ghost kitchens and virtual restaurants, and we think those are here to stay,” Carson Young, owner of The Queso Shop, said in the release. “We’re excited to bring fans of Yumbii and The Queso Truck to a new location with easy pick-up and ordering capabilities.”
