Down South CaJJun Eats serves chicken sandwiches, gumbos, and seafood platters in an outdoor setting. The report listed the following violations:
- The establishment did not display its current food permit and food protection manager certificate in a visible location. Required signage, including employee illness reporting, symptom guidelines, and food allergen awareness posters, was also missing.
- The facility did not have written procedures for handling vomiting or diarrheal incidents, the inspection report states.
- No soap was available at a handwashing sink in the bar area and another was being used to store a sanitizer bucket. Soap was provided during the inspection.
- Shucked oysters were found stored in standing water. Several temperature-controlled food items, like sausage, pork chops, and Caesar dressing, were held above safe temperatures for over four hours. Affected food items were discarded.
- The report noted that food-contact surfaces and utensils, including soda gun nozzles and containers, were found unclean with visible residue.
- Prepared foods stored for more than 24 hours were not properly date-marked. The menu lacked required indicators and advisory statements for raw or undercooked items.
- Spray bottles containing toxic substances were not labeled, the report states.
- Raw shucked shellfish packages were not properly labeled and were discarded during the inspection.

- Evidence of rodent activity, including droppings near the water heater, was seen. Exterior openings were not properly sealed, the report noted.
- Wet wiping cloths were not stored in a sanitizer solution, and clean utensils were improperly stored without being covered or inverted.
- Refrigeration units were not maintaining proper temperatures, and damaged utensils, including cracked plates and broken tools, remained in use.
- The establishment did not have test strips to measure sanitizer concentration, which are necessary to ensure effective sanitization.
- Nonfood-contact surfaces, including refrigeration units, stoves, and shelving, showed buildup of grease, dust, and debris. Floors and walls also had visible accumulation.
- The report said that physical facilities were not properly maintained, with damaged or missing ceiling tiles observed.
