Crumbl Cookies to Open Round Rock Location

Crumbl Cookies, the growing cookie chain, will soon be opening a location in Round Rock, according to a recent filing with the State of Texas. The restaurant will be located at 3021 S I-35 Frontage Road, within Suite 140, near eateries such as Eddie’s Tavern and Pho Viet. 

“I run five stores,” franchisee John Schafer tells What Now Austin. “Two in the Austin area—one in Cedar Park, one in Pflugerville.” 

Mr. Schafer explains that he is based in Utah, but runs the Central Texas locations with his family. His son operates the Cedar Park location and his sister the Pflugerville one. 

When asked why he chose to franchise with Crumbl Cookies, Mr. Schafer says “First of all, I really like their cookies, and the company is great to work with. I love the vision of the founders — they are interested in bringing people together, in keeping a focus on family and people.” 

“They really care for franchise partners and want us to be successful. It fit into what my family vision was. It turned into a good opportunity for my family and kids to work together.” 

When asked which of the brand’s many flavors reigns supreme for Mr. Schafer, he has a quick and clear answer. 

“My favorite flavor is the ginger snap cookie. We only do it in December, which is really sad because I love that cookie. I don’t typically eat a whole cookie, but I eat those two to three times a week.”

And in such a large, sprawling market as Round Rock, why did Mr. Schafer choose Round Rock as his next location? 

“Round Rock is a great area. My sister’s lived there for 20 years. The plan was to put one near her home.”

Eager cookie fans in the area can anticipate a spring opening, according to Mr. Schafer.

“We’re targeting an opening in April, just got our plans completed and we should starting construction in the next two weeks.”
