After a brief period of operation, Senza Maeso will be shutting down permanently. The tasting room and bar will close after pouring its final drink on May 31. The owners announced the decision on social media, citing financial challenges.
Senza Maeso Announces Closure
The trendy and aesthetic tasting room and bar, Senza Maeso, is known for serving cocktails, wine, artisanal spirits, and non-alcoholic drinks. Located in the Texas Hill Country between San Marcos and Wimberley, the space features an Art Deco and sci-fi-inspired interior.
In addition to its beverage program, the bar also features two permanent food trucks, Quick Fix Cuisine and Darrel’s Board. The menu includes Mexican and Thai fusion dishes and made-to-order burgers and sandwiches. The concept was created by twin brothers Ryan and Jay Gitman.
In an Instagram post, the owners shared an emotional message and announced the closure. They said, “We’ve been putting this off because there’s no easy way to say it. Senza Maeso will be closing on Sunday, May 31.”
“We’re proud of what we built here. We’re proud of our staff,” they added. In the post, they also thanked the community and wrote, “We’re thankful for every person who walked in, brought a friend, ordered a drink, asked a question, came back, or made this place part of their life in any small way.”
The owners encouraged community members to visit before Senza Maeso’s final day of service. “We hope you’ll come out to enjoy the bar while it’s still here and support the staff who have made it so special,” shared the owners.

Why the Closure
The owners of the bar stated that the business has been doing well, writing, “We’re busier than we’ve ever been; more people are finding the spirit, and there is so much about this place that feels like it’s working.”
“But the truth is, it took a lot to get here,” the statement continued. The owners explained, “More time, more energy, and a lot more money than we expected. We’ve reached the point where we simply can’t keep operating.”
Several loyal patrons of the bar flooded the social media post with heartfelt messages following the closure announcement. One of the fans commented, “Still hands down one of the coolest spots I ever stumbled upon. Grateful for the opportunity to check it out.”
As Senza Maeso enters its final weeks of operation in the Texas Hill Country, it hopes to have a memorable time to celebrate its journey. The community in the region will lose a favorite spot after the closure.
