Sunset Valley coffee pub and roaster plans to open second brick-and-mortar location. According to public filings, Stouthaus Coffee Roasters is set to open a new location at 3008 Davis Lane, Unit 230, in Austin.
The Davis Lane site lists an opening in October 2026, according to the brand’s website. It would mark the brand’s second permanent café, following its original Sunset Valley pub on South Lamar Boulevard.
Founded by James and Sandy Hughes, Stouthaus Coffee Roasters opened its first location at 4715 S. Lamar Blvd., just off the frontage road of Highway 290. What Now Austin reached out to James for more details about the opening but did not receive a response before publication.
The pub built a following as a hybrid coffee shop and neighborhood “public haus,” serving locally roasted coffee, including its Mexican vanilla latte and butter coffee bombs, alongside Texas craft beer and wine, with 18 taps and food from area vendors, including pastries, breakfast tacos, paninis, and cheese plates.
In fall 2020, the company launched its own roasting operation, debuting a signature espresso blend called “The Resistance.” In September 2023, Stouthaus spun off a second concept, a coffee trailer at Thicket Food Park on South First Street, before turning its attention to a second full café.
The design for the new Davis Lane café comes from Shane Bruegger, who also designed Ramen Del Barrio’s latest Austin location. Bruegger has built a portfolio around the city’s independent restaurant scene, with credits that include Via 313 Pizza and Craft Omakase.
