Founded as a family business in 2002, Summer Moon Coffee is a highly unique Texas-born cafe concept, and over the years, its network has grown to include more than 70 coffee shops. This year, it’s expanding close to home once again, with a new cafe planned for 1310 W University Ave. in Georgetown, according to a Texas Department of Licensing and Regulation Filing.
Known for its proprietary Moon Milk and its oak-roasted beans, Summer Moon Coffee was “founded by a closely-knit family in the Texas Hill Country,” the Summer Moon website says. “We’ve always had one goal in mind: to create a distinctive, out-of-this-world experience that people drive across town for.”
What Now spoke on Friday with Randy Findley, the franchisee behind the Georgetown location—plus six others currently in operation—about his journey with Summer Moon Coffee.
“I was actually the first non-family member to build one. I was in engineering, in the semiconductor industry, but I was really looking to transition to something where I could spend more time with my family. I told my wife I wanted to open a business—a coffee shop. But even though I knew a lot about coffee, I knew nothing about coffee shops. And then, that week, I met the owner [of Summer Moon Coffee] at a school event. Now I have six locations, and I’ve been looking to open one in Georgetown for a long time.”
The West University Avenue location comprises about 1,850 square feet, with seating both inside and on a patio. There you’ll be able to find Summer Moon’s menu of pastries, breakfast tacos, breakfast and lunch sandwiches, and (of course) Summer Moon coffee.
“We do oak roasted coffee,” Findley said. “We’re the only ones in the world really—the only ones of any serious size—who do wood-roasted coffee. That creates a very unique and well-loved espresso. We also have sweetened lattes with Moon Milk, which is a proprietary blend of 7 natural ingredients for our in-house sweetened lattes. That’s another very well-loved product.”
Summer Moon Coffee’s Georgetown location is expected to open in mid-July.
