Bubbakoo’s Burritos Returning to Massachusetts With New Hudson Restaurant

After leaving Boston a couple of years ago, Bubbakoo’s is returning to Massachusetts with a new location at the RK Hudson Towne Center.

A New Jersey-based burrito chain is expanding to Hudson.

Bubbakoo’s Burritos is preparing to open a new fast-casual restaurant at the RK Hudson Towne Center, located at 213 Washington Street. The shopping center recently announced the news on social media, encouraging customers to “get ready for delicious burritos, bowls, tacos & quesadillas” and teasing that an opening date will be announced soon.

Founded in Point Pleasant, New Jersey in 2008, Bubbakoo’s has grown to more than 150 restaurants spanning 17 states. The Mexican-fusion chain was acquired last summer by St. Louis-based private equity firm Thompson Street Capital Partners, which said the partnership would help scale operations and support the brand’s nationwide expansion.

The chain’s menu puts a customizable spin on fast-casual Mexican favorites, including burritos, tacos, quesadillas, and bowls, as well as some more unexpected offerings. One signature item is the “Chiwawa,” a build-your-own panko-crusted cheesy rice ball, while other fusion options include the General Tso’s Taco Trio, Nashville Hot Chicken Burrito, Aloha Pineapple Pork Burrito, and Buffalo Chicken Nachos.

The Hudson location will be operated by franchisee Ripal Patel, while the lease was brokered by Travis Ginsberg of Summit Realty Partners. Patel could not immediately be reached for comment, though he is also behind at least one other Bubbakoo’s location in Bedford, New Hampshire, as well as several Tropical Smoothie Café locations throughout New England.

Once open, the Hudson restaurant will mark Bubbakoo’s return to Massachusetts following the closure of its Brighton Avenue location in Boston a couple of years ago. For now, the closest Bubbakoo’s is in Nashua, New Hampshire, though The Enterprise reported in March that another Massachusetts location may be on the way to Brockton.

An official opening date for the Hudson location has not yet been announced. Bubbakoo’s Burritos president and CEO Chris Ives told What Now Boston that more details will be shared soon, so stay tuned for updates.
