Florida-Based Rocco’s Tacos & Tequila Bar Expanding to the Burlington Mall

A lively taco and tequila concept will debut its first New England outpost in Burlington this summer.

A Florida-born taco and tequila bar is headed north.

The Burlington Select Board recently approved an all-alcohol liquor license for Rocco’s Tacos & Tequila Bar to open its first New England location at 75 Middlesex Turnpike inside the Burlington Mall, reports the Daily Times Chronicle. The restaurant will take over the former site of Rosa Mexicano on the mall’s lower level, directly across from Legal Sea Foods.

Founded in West Palm Beach by restaurateur Rocco Mangel, the brand has grown to include nine Florida locations and one in Huntington Station, New York. Known for its hand-pressed corn tortillas, expansive tequila selection, and lively atmosphere, Rocco’s is celebrated as both a popular dining destination and a hub for late-night fun.

“While Rocco’s Tacos built its legendary reputation in South Florida and New York, the expansion into the Massachusetts market represents a major strategic milestone for the brand,” reads a news release from Rocco’s Tacos. “As the 11th location in the company’s portfolio, the Burlington opening establishes a massive New England flagship for the award-winning concept.”

The menu will spotlight authentic Mexican cuisine centered around the brand’s handmade tortillas, alongside an “unmatched” tequila selection featuring more than 200 options. From lively happy hours to late-night dinners, the Burlington location is set to deliver a vibrant, high-energy dining experience for every occasion.

The space itself will undergo a refresh, including enclosing the existing patio, which is currently covered by an open-air pergola. The redesign will reflect the brand’s signature style, pairing polished architectural elements with a lively, energetic feel. A central tequila bar will anchor the space, accented by thoughtfully selected fixtures and décor sourced directly from Mexico.

“As we prepare to open our 11th location, we remain focused on the philosophy that started it all,” reads the release. “Since the first Rocco’s Tacos opened in 2007, our mission has been to treat every person who walks through our doors not just as a customer, but as a guest in our home. We are proud to bring this level of hospitality to the Burlington community.”

As the opening approaches, Rocco’s Tacos & Tequila Bar is hiring for all positions. The team expects to welcome its first Burlington guests in the summer of 2026.
