A Canadian grilled cheese chain is turning up the heat in Boston.

Toronto-based Meltwich is bringing its gooey, golden goodness to 1102 Commonwealth Ave, right on the Boston/Brookline border, confirmed Executive Vice President & Global Business Development Officer Ryan Hillis.

Founded in 2015 by restaurateur Tom Mavrou and his wife Barb Kiss, Meltwich has quickly grown into a cheesy empire, today boasting more than 50 locations across Canada and a growing U.S. presence. The Boston site will mark the brand’s fourth American location, with around 20 more currently in development.

Known for its decadent gourmet grilled cheese sandwiches, Meltwich takes comfort food classics to new levels with creations like the Mac Attack, Southern Fried Chicken Melt, and Bacon Avocado. Beyond sandwiches, the menu features other cheesy options like Hot Mess Fries (the brand’s take on poutine), “monstrous” burgers, creamy milkshakes, and a variety of vegan-friendly fare.

“Our slogan here is, ‘In cheese we trust,’ and everything on the menu melts,” Hillis told What Now Boston. “Cheese is a big part of what we do.”

Meltwich operates under three distinct models: the traditional, the fully halal, and the Bar & Grill concept, which features a full bar or beer-and-wine service in a larger, roughly 2,000 square foot space.

Led by local franchisee Sohel Dugla, the Boston location will operate as a fully halal Meltwich. “It’s basically the same menu that we have everywhere else,” explained Hillis. “We just use beef bacon instead of pork bacon in the recipes, and everything is hand-slaughtered and certified halal.” A limited selection of alcohol will also be available.

The cozy Commonwealth Ave spot will seat around 20 guests and is on track to open by late November 2025, pending final inspections and permits.
