An intimate spot for elevated dining and craft drinks is set to open in Charleston.
Bellerose Hotel Bar, a new concept from Adept Hospitality, is set to open at 158 Church St.
The hospitality group was founded by Ryan Stock, Josh Tohl and Jonathan Husby. Its portfolio includes Sushi | Bar, Albas Empanadas, Bamboo Room, Ggiata Delicatessen, Ginger’s, Golden Ace, Golden Sound and Iggy’s.
Despite its name, Bellerose Hotel Bar is not located in a hotel. It takes inspiration from renowned New York City spots such as the King Cole Bar at the St. Regis and Bemelmans Bar at The Carlyle.
“I was looking at this property, and we were standing outside, and I’m looking at these windows, and it had this feel of a very small boutique hotel. It’s one of these beautiful, incredible, classic buildings that you see in Charleston,” Stock told What Now Charleston.”
Stock said Bellerose Hotel Bar reflects the group’s passion for travel and hospitality.
“We do a lot of traveling. I think there is something really special about some of the classic hotel bars. Within those hotels, almost the heartbeat of the vibe comes from the bar, and I just thought there was something really cool there,” he said.
When it came to the name, the team wanted something timeless.
“I was looking for something that was different, unique, but also sounded like it had a degree of class to it. I was looking for something that has a name to it, almost someone’s personal name, but without being direct,” Stock said.
The interior design will also reflect the name.
“Looking at some of those hotel bars, it’s beautiful dark woods, it’s marbles, it’s rich tones,” Stock said. “We’re bringing in, a nod to the name Rose, small elements of deep burgundy, Bordeaux, and rose petal colors. It’s a palate of something that feels very warm, intimate.”
Drawing on its intimate vibe, the space will feature just eight exclusive dining tables.
Chef Anthony Martin’s menu will feature classic yet elevated dishes, including filet mignon, Chatel Farm ribeye, dry-aged New York strip, Carolina flounder and Loch Duart salmon. Sharable sides such as maitake mushrooms, potato purée, glazed broccolini and king crab mac and cheese will complement the main courses.
Bellerose Hotel Bar will offer an innovative cocktail menu, including the “Rob Roy” with Monkey Shoulder Scotch, Carpano Antica, orange bitters and a Luxardo cherry, and the “Last Word” with Botanist gin, green Chartreuse, Luxardo maraschino, and cherry and lime juice. Wine and beer selections will also be available.
Stock said he looks forward to bringing another Adept Hospitality concept to Charleston.
“I think it’s one of the most exciting markets in the country. There’s a ton of opportunity for continued expansion of different offerings. There’s just so many things that I think this market is just fantastic for, as is related to the world of hospitality. I’m very excited to be a part of it,” he said.
Bellerose Hotel Bar is currently in its soft-opening phase, with plenty more planned for the concept.
“It’s a brand new concept. It’s evolving and it’s going to continue to evolve probably for the next 12 months. I think we continue to just build upon it and enhance the overall idea of what Bellerose is and what it can be,” Stock said.
He continued, “Opening day doesn’t mean the work is done. Oftentimes, that is when a lot of the work starts. How do we create the guest experience to always be better?”
