A new Mexican restaurant is coming to Johns Island, taking over the former Colectivo space at 2901 Maybank Highway.
Owners Jaime Tinoco and Pamela Sierra are preparing to open El Molino – La Taqueria, a full-service family restaurant.
A permit issued on May 1 approves updates to the building’s existing signage, officially changing the name from “Colectivo” to “El Molino – La Taqueria.”
“Our concept comes from El Molino Supermarket on Rivers Avenue,” Sierra told What Now Charleston. “We’re going to strictly do the Taqueria part, mostly considered more of a street taco concept style.”
The restaurant has also applied for a permit to serve beer, wine and liquor. Sierra said the menu will include a customer favorite: Micheladas—a classic Mexican drink made with beer, tomato and lime juice, assorted sauces and chili peppers. Similar to a Bloody Mary, the Michelada swaps vodka for a beer base, giving it a bold and refreshing twist.
While an official grand opening date has yet to be announced, the owners plan to open later this summer.
Tinoco and Sierra also run three El Molino Supermarkets—where the restaurant draws its roots—as well as Kooben Café Mexicano, a coffee shop in Hanahan and La Michoacana, an ice cream shop.
