Food Truck Favorite Girl Nextdough Opening Bakery on James Island

Former FIG pastry chef Caitlin Schumacher is opening her first bakery this fall, expanding from a popular food truck to a full menu with baked goods and lunch.

A pastry shop on wheels is hitting the brakes and opening a storefront on James Island this fall.

According to the Post and Courier, former FIG executive pastry chef Caitlin Schumacher will open Girl Nextdough at 1939 Maybank Highway, taking over the former LB Sweets and Treats location as the business prepares to serve its last scoop.

The brick-and-mortar bakery will serve as an extension of Schumacher’s food truck of the same name, which she launched in September 2021. Schumacher credits her love for baking to her father, John McCormick, who often specialized in dinner rolls, biscuits and pies.

The food truck will be open June 28 and 29 before Schumacher pauses operations for the summer to prepare for the bakery’s opening. She will continue supplying wholesale clients including Jackrabbit Filly, Gold Star Coffee and FIG, which still uses her brioche bread, the outlet reported.

Opening her own storefront has long been a dream, Schumacher said. It will also allow better control over the temperature and quality of baked goods, which can be difficult to manage on a food truck.

With Girl Nextdough’s opening, Schumacher plans to expand the menu to include lunch options like bagel sandwiches, homemade bagels, filled doughnuts such as a daily Boston cream and coffee.

“The community’s been so supportive to us,” Schumacher told the Post and Courier. “Our hands touch every single thing.”

What Now Charleston reached out to Schumacher about the storefront opening, but she has not yet responded.
