Allison Anspach is bringing sourdough breads, including baguettes, focaccia, croissants, Danishes, and other baked goods to Charleston with her first ever brick-and-mortar spot, dubbed Grit Bakery.
Anspach hopes to open in the next few weeks in suite 160 at 601 Meeting Street, which will have an open concept that allows patrons to see Anspach and her staff crafting their baked goods. Grit will also offer coffee, though in the beginning it will just be drip coffee and cold brew.
The gifted baker moved to Charleston two years ago with her husband after eight years on the west coast, where she had operated Grit Bakery as a cottage store. While in Charleston, she’s baked at different locations and sold her breads wholesale.
But with her first physical location in Charleston, she says she’s here “for the long haul.”
Her new space is 1,700 square feet, with room for about 12 people to sit. Anspach will eventually offer sandwiches as well.
“I really just hope it’s the type of place where someone comes to get their baguette for dinner, their sourdough for their kids sandwiches, and ‘I’m gonna stop by on my way to work and pick up a box of pastries,'” Anspach told What Now Charleston. “I really like the sharing and communal aspect of eating baked goods.”
