Prolific local restaurant group Indigo Road, which is based in Charleston, is adding a new restaurant just up the coast in Georgetown by year’s end.
The Independent will be an upscale coastal-inspired dining experience within the group’s latest acquisition, the boutique George Hotel. The 56-room lodging is being developed in partnership with Winyah Hospitality in the historic former Georgetown Times building.
The new restaurant will seat 75 guests and feature a menu led by Executive Chef Thomas Vance, who has headed up local kitchens such as Carpe Diem. They’ll serve seafood and coastal-inspired cuisine with a view, offering outdoor seating overlooking the marina.
Indigo Road is known for its successful restaurants across the Southeast, most notably O-Ku, Indaco and Oak Steakhouse. They first entered the hotel space in 2020, beginning with two lodges in North Carolina and a hotel in Mason City, Iowa. According to their website, nine more hotels are in development, including two in the Charleston area: Le Richemont on King St downtown and The Daniel Island Hotel.
Though The George won’t welcome guests until February 2024 according to its website, Indigo Road President Steve Palmer told Post and Courier The Independent is aiming to open before the end of the year.
