New Seafood and Pizza Concept Coming to South Carolina

Mother's Oysters + Pies is in the works in Lexington, targeting a late summer 2025 opening.

A new seafood restaurant is coming to South Carolina.

Mother’s Oysters + Pies is planned for 109 Old Chapin Road in Lexington. The space is located at The Shoppes at Flight Deck.

The restaurant is expected to serve fresh oysters (raw or charbroiled), Neapolitan-style pizza and pasta, along with Southern cuisine like shrimp and grits and seafood boils. The Mediterranean-inspired space is expected to feature seating for 140 across two levels, plus two full bars.

The restaurant comes from Jonathan Stambolitis, also the co-founder of a development company called Purty Property Co., which is the team behind the mixed-use Sandpiper Square project. His father, Ted Stambolitis, owns Flight Deck Restaurant, which is located in the same shopping center as the planned Mother’s Oysters + Pies.

Mother’s Oysters + Pies is expected to open in late summer 2025.
