A new restaurant and cocktail bar reminiscent of an Irish pub is moving forward in Charleston, plans that have been several years in the making.

Ownership for Hazel and Apple has applied for building permits, a step they call an “important milestone” for the business.

“Given the numerous challenges this project has presented and the length of time it has taken, we often wondered if we would ever reach this point. However, we persevered,” according to a social media announcement. It’s anticipated that once approved, construction on the space would take about 33 weeks.

The pub is planned for 549 King Street in the space formerly occupied by Bonny’s Hideaway. Hazel and Apple is expected to feature two separate bars, with “The Hazel” at the front and “The Apple” at the back, opening to an outdoor patio space. The Hazel will offer the ambiance of an authentic Irish pub, serving pub food and featuring live music. The Apple will have an “added element of relaxed elegance.” The Apple will also be a private event and party space. As for the decor, expect apple-inspired hues of red and green.

The concept comes from acclaimed hospitality professionals Sean Muldoon and Jillian Vose. Muldoon and Vose have researched cocktail bars throughout the United States, Central America and Europe to help develop Hazel and Apple, with plans to use local products as much as possible.

Vose told What Now Charleston they are targeting a January or February 2026 opening for Hazel and Apple.
