Another Ruby’s Bagels is set to join the dining scene in South Carolina, this time nestled in the burgeoning One Nexton shopping center at Brighton Park Blvd and Nexton Parkway in Summerville. While the Nexton location is currently in development, specifics for the eatery are still under wraps at this early stage.
This marks yet another milestone following the successful launches of three existing Ruby’s Bagels in Mount Pleasant, North Charleston, and West Ashley. Additionally, another new location will soon open in Mount Pleasant’s Carolina Park, scheduled to welcome guests this month, on March 15, 2024.
Ruby’s is the brainchild of Joe Harvey and Kevin Roach, along with their wives Denise and Gail. Driven by frustration with the lack of authentic, New York-style bagels in Charleston, Kevin realized he wasn’t alone in craving a genuine bagel experience in the Lowcountry.
This realization sparked conversations with his longtime friend Joe, and they eventually joined forces to establish Ruby’s Bagels. With Joe and Denise already seasoned proprietors of several thriving coffee shops in the Northeast, Ruby’s incorporates many beloved items from those establishments into its menu.
The bagel-making process at Ruby’s is characterized by meticulous attention to detail, utilizing only the freshest, all-natural ingredients. Alongside its signature New York-style bagels, the eatery offers salads and bagel sandwiches, as well as an extensive selection of coffee beverages. Additionally, there are plans in progress to introduce new deli sandwiches across all stores, commemorating Ruby’s forthcoming debut in North Mount Pleasant.
