Spice Palette Owner to Open Coastal Indian Restaurant in Charleston

A new Indian restaurant is set to open offering modern twists on traditional family recipes and a menu inspired by regional coastal flavors.

Sujith Varghese, owner of Spice Palette, is launching a new restaurant concept.

Rivayat Creative Indian, a coastal creative Indian restaurant, is set to open in the former Makan space at 210 Rutledge Ave.

The menu will highlight coastal Indian flavors. Varghese told What Now Charleston that Rivayat will feature a few fan favorites from Spice Palette—with a modern, coastal twist. He said the team recently finalized the menu.

One standout dish will be lobster mole, cooked in coconut sauce with black pepper, fennel and caramelized onions.

“There are a lot of new dishes that we haven’t done before. It relates to my mom’s cooking and what I was raised with, so we’re incorporating that into the restaurant,” Varghese said. “We’re doing a lot of family dishes, which means a lot where I come from.”

Varghese said he’s eager to share the ambiance and hospitality with the Charleston community.

While they’re still awaiting inspections, an exact opening date hasn’t been confirmed, but Varghese is aiming for summer 2025.

“Please bear with us as inspections take their time to go through and I promise it’ll be worth the wait,” he said.
