CudaCo Seafood House Expanding into Multi-Building Compound

A seafood staple on James Island is poised for a major expansion.

CudaCo Seafood House is transforming its one-building operation at 765 Folly Rd into a multi-building compound, according to Charleston City Paper.

Chef Shaun Brian, who co-owns the establishment with Chris John, is spearheading the design and construction of the two new buildings. One will serve as a crudo wine and beer bar, while the other will function as a retail and event space.

The crudo bar, housed in a compact 20-by-20-foot structure, will offer a more service-oriented experience, with staff helping to deliver orders and clear tables. The menu will feature ceviche, dressed oysters, and a relaxed take on caviar service.

The larger building will reflect CudaCo’s evolution into a water-based lifestyle sustainability brand. Patrons will find eco-friendly products, including coolers crafted from recycled plastics, alongside a curated selection of tinned seafood. The space will also host events like ceviche-making classes and oyster-and-champagne pairings.

The CudaCo expansion is slated for completion in 2025.
