Another sushi option is coming to the northwest neighborhood.
Jinsei Motto is reopening as a new location with wood fire dishes at 2456 N California Street. This will be the second project from owner and chef Patrick Bouaphanh. Right now, a fall opening is looking likely.
The restaurant at 564 W Randolph Street closed in April of this year. Now, Bouaphanh is looking to revive the name with a new space. He will be installing a wood fire oven, which will change the way dishes are made in the kitchen.
“I kind of wanted to make it my own,” Bouaphanh said.
At Jenei Motto, there will be an emphasis on seafood, with dry aged snappers. The staff are building a full-service sushi bar, which will be one of the main draws of the space. Seasonal veggies, and wood fire pizzas are also on the menu.
What Now Chicago reported on Jinsei Motto adding a new omakase bar to the CH Distillery in November 2021. Bouaphanh had previously owned Jinsei Motto on Randolph Street with Andrew Choi, who has since stepped away from the project. Now, Bouaphanh is pursuing his own business venture with business partner Chef Eric Blanck, who has helped with Jinsei Motto in its early stages.
Jinsei Motto is going in at the former Testaccio Italian restaurant location. The new restaurant will be close to Logan Square’s center. It is two blocks from W Fullerton Avenue, and restaurants like Namaste Chicago and La Licor Panamericana are closeby.
“It’s been booming for a while,” Bouaphanh said.
