When Mindy’s Bakery reopens at its new location in Wicker Park, it will operate five days a week and offer not just Mindy Segal’s signature bagels and pastries, reports Eater Chicago, it will also carry a fair share of savory items like pot pies and confit chicken thighs. Mindy’s Bakery is currently in the process of relocating to the former Red Hen Bread space at the Six Corners intersection. Segal is reportedly aiming for an early February opening.
Segal is an award winning pastry chef who operated her restaurant Mindy’s HotChocolate for 15 years at 1747 N Damen Avenue. In 2020, Segal opted to shutter the restaurant and reopen in the same space under the name Mindy’s Bakery. The bakery, the concept now relocating, has been operating only on the weekends, from 8AM until the goods sell out.
Segal tells Eater the new space, a little smaller than the bakery’s current spot, will allow her to focus on supporting her staff. Her pastry chef Bo Durham will work on the desserts while Segal will work on developing the savory items.
