According to a recent permit filing, vegan sandwich shop Seitan’s Realm at 3494 N High St will soon expand to have a larger restaurant. The permit details expanding into the adjoining space at 3496 N High St, which was the former site of a tailor shop.
What Now Columbus reached out to owner Kevin Ridenbaugh to learn more about the plans for expansion. Ridenbaugh shared that when the expansion is complete, the eatery’s seating space should double in size, with the new space allowing them to offer around 48 seats. While Ridenbaugh doesn’t have a timeline for when the work should be complete just yet, he explained that when the expansion is finished customers can expect more seating, some expanded food choices and possibly wine and spirits becoming available in addition to the selection of beers currently offered.
What will remain the same is the eatery’s vegan menu, since Ridenbaugh and his wife, Amber, who he co-owns Seitan’s Realm with, have been vegan for about a decade. When the couple decided to start their own vegan eatery, it began as a food truck in 2019 before opening the brick and mortar space on Halloween 2020.
The restaurant’s name is a twist on seitan, a form of plant-based protein made from wheat gluten. The plant protein is known for having a mild flavor, making it highly versatile. Seitan’s Realm serves vegan sandwiches like a plant-based barbecue sandwich, an Italian-style sub and even a plant-based gyro.
