Lisa and Elia “Tom” Georgalis, owners of Nikki Greek Bistro & Lounge, are introducing a brand-new concept this fall: The Devonshire Club, opening Friday, November 14, 2025. Located in the same beloved space at 5757 W. Lovers Lane, the restaurant will transition from its Greek fine dining roots into a sophisticated yet welcoming neighborhood bar and lounge.
Named after the surrounding Devonshire neighborhood, the concept reflects the Georgalis family’s desire to create something that truly belongs to the community, a place that feels local, lively, and social.
The Georgalis family, who brought Elia’s family recipes to Dallas through Nikki, say the decision to evolve was guided by the community. “We have been honored to share my family’s recipes and see how warmly Dallas embraced them,” said Elia “Tom” Georgalis in a statement. “But over the past year, we’ve listened to our neighbors and regulars. People want a place where they can linger, socialize, and enjoy great food and drinks in a lively, comfortable atmosphere. The Devonshire Club was born out of that vision.”
To bring this new concept to life, the Georgalis family partnered with Chef Jacob Williamson, a seasoned Dallas chef known for his globally inspired yet approachable style, to consult on and develop the menu.
“Jacob understood exactly what we wanted, something that feels elevated but still easy to enjoy,” said Lisa Georgalis. “He’s helped us create a menu that fits perfectly with the neighborhood. It’s thoughtful, flavorful, and ideal for sharing over cocktails or wine.”
Chef Williamson describes the menu as a new American lounge fare with global influences, blending Americana, Asian, and French inspirations — and, of course, a touch of Greek flair. “We spent a lot of time researching what works around town and what people in the area really enjoy,” said Williamson. “Everything is designed to be accessible and sharable, food you want to eat while you’re having a great drink and an even better conversation. You can order by the bite, mix and match your favorites, and really make it your own. It’s a choose-your-own-adventure kind of menu with something for everyone. It’s elevated, but it’s still fun.”
Guests can look forward to an assortment of solo and shared plates, from the Spicy Tuna Tartare with potato pavé and piment d’espelette, to the Mini Saganaki Burger — a playful nod to Nikki’s past — featuring TX Wagyu, halloumi, arugula, tomato jam, and oregano dijonnaise. Other standouts include the Smoked Salmon Rillettes served with house-made spoon-shaped crackers, Duck Confit Quesadilla with brie and tart cherry, and Tom’s Fries, reimagined with béchamel, feta, Fresno peppers, and cilantro. And for dessert, guests can indulge in J. Rae’s Cheesecake, crafted by Chef Jacob’s wife, Audrey Williamson, owner of J. Rae’s Bakery, located just across Lovers Lane in Devonshire.
A fun signature touch will greet every guest from the moment they sit down, a small bowl of popcorn dusted with Chef Jacob’s proprietary seasoning blend. What began as a hobby during the pandemic has grown into one of his culinary calling cards. He’s continued to refine his seasoning recipes over the years, creating a craveable mix of spices that will also feature in his steak seasoning and other dishes throughout the menu.
Chef Jacob will also consult on the beverage program, curating flavor pairings and seasonally inspired cocktails to complement the menu. The Devonshire Club will also feature a daily happy hour from 3 to 7 p.m., six days a week, with drink and food specials designed to make afternoons as lively as the evenings.
The Devonshire Club will be open until 2 a.m. on weekends, offering a mix of elevated bar and lounge experiences, including cocktails, billiards, shuffleboard, and darts. TVs will be placed throughout the space for sports watching, making it easy to settle in for a game with friends.
“We wanted to create a place that feels alive — somewhere with constant energy and movement,” said Lisa Georgalis. “You can play a game, catch a match with friends, or meet someone new over cocktails and small plates. It’s not the kind of place where you’re stuck in your seat; it’s designed to move, breathe, and connect with the neighborhood around it. The Devonshire Club is very much a bar with bites, but with super-elevated, genuinely delicious bites. And with a late-night kitchen, the energy carries on long after dinner. It’s a space for the community to gather, unwind, and have fun together.”
