The Flying Biscuit Café plans to open at 2447 N. Judge Ely Boulevard in Abilene, according to a project filing with the Texas Department of Licensing and Regulation.

The filing describes a 3,845-square-foot restaurant build-out with an estimated cost of $350,000. Construction is scheduled to begin December 1, 2026, and finish March 1, 2027.

The brand is targeting the first quarter of 2027 for the opening at Allen Ridge, according to a company announcement. Franchise partners Edward Ortiz, Samantha Ortiz, and Edgar Ortiz will own and operate the company’s first café in West Texas.

Flying Biscuit opened its first café in Atlanta’s Candler Park neighborhood in 1993 and sold out of its biscuits that morning. Today, the brand operates more than 40 locations, including Texas restaurants in Houston, Cypress, Kingwood, and Richmond.

The chain serves Southern-inspired breakfast, brunch, and lunch, with biscuits and grits among its staples. Drinks include coffee, espresso beverages, and brunch cocktails.

An exact opening date has not been announced. Flying Biscuit’s website and lease announcement give the address as 2467 N. Judge Ely Boulevard. The project filing lists the street number as 2447.

What Now Dallas reached out to franchise owner Edward Ortiz but did not hear back by the time of this publication. This article may be updated as more information becomes available.
