‘The Regular,’ one of Denver’s known fine-dining eating spots, has brought an interesting turn of events in the city’s restaurant space by turning into an event venue. Owned by the chef couple Sydney Younggreen and Brian De Souza, the Denver venue will now offer a guest chef dinner series every month.

March 30 will mark the beginning of The Regular’s first stint as an event venue. The first chef to host the Denver-based venue’s monthly chef dinner series is Yuan Wonton’s Carolina Zubiate. The chef is known for her culinary finesse in preparing Peruvian dishes through her restaurant’s ‘Chifa Night pop-ups.’
Zubiate is now prepping up to present guests with a six-course menu full of Peruvian flavors at The Regular’s event venue. Each dish that she will prepare will be in honor of Women’s History Month.
Sharing her excitement, Zubiate said, “I think it’s going to be a great opportunity. The space is beautiful, so I think it’s a big opportunity and blessing that they’re allowing me to. They’re welcoming not just me but my food into their venue.”
After Carolina Zubiate, Pinchi Umami’s Michael Diaz de Leon will take charge as the future guest chef at the Denver-based event venue on April 27.
From Fine Dine to Event Venue: The Path Change for ‘The Regular’

The chef couple of Sydney Younggreen and Brian De Souza kicked off their Denver-based restaurant ‘The Regular’ in 2023. Designed by Roth Sheppard Architects, the De Souza’s fine dining space was spread over a 6,000 sq ft area.
The chef couple had been using their Denver restaurant for corporate events and private buyouts since its opening. But soon, that side of The Regular’s business took off. Plus, the De Souzas were also “approached by a couple of opportunities to potentially move” it elsewhere in a smaller venue having 40-50 seats.
In February 2024, the chef couple officially turned their Denver restaurant into an event venue. Its monthly dinner series was Younggreen’s idea, through which she wanted to offer a first-hand learning platform for upcoming chefs.
“It’s something we really appreciated when we were up-and-coming cooks in New York,” Younggreen noted.
Through their new monthly dinner feature at the Denver event venue, the chef couple wants to allow the guest chef to use their creativity in preparing the menu. The Denver public can reserve their place at The Regular and get a tasting menu having an à la carte beverage list.

The Chefs Life
Iowa-based Sydney Younggreen met Brian De Souza, who hails from Peru, during their stint as chefs in New York City. They worked together at Her Name Was Carmen. After working for some more restaurants, they became global chefs and eventually settled down in Boulder in 2019.
Launching Their First Restaurant ‘The Guest’
The chef couple always wanted to start their own restaurant, so Younggreen and De Souza began a sixteen-course-tasting menu at their house during the pandemic. They called it ‘The Guest.’ “The Regular was meant to kind of be the counterpart to The Guest, kind of more a concept where you could come enjoy and be a regular,” Younggreen said.
The shift of Denver’s The Regular from a fine dining restaurant to an event venue is set to bring new changes to the city’s culinary space. Its monthly guest chef dinner series will not only be a mode to serve delicious food but also be a first-hand learning platform for budding chefs of Denver.
