A new Chick-fil-A restaurant is ready to serve the Erie and Lafayette communities at its newest location opening on Thursday, May 29, 2025, creating approximately 100 jobs. Chick-fil-A, Inc. selected Alyssa Anderson to be the local Owner-Operator of Chick-fil-A Hwy 287 & Arapahoe Rd.

Located 2950 Arapahoe Road, the new restaurant will serve guests Monday through Saturday from 6:30 a.m. to 10:00 p.m., offering dine-in, drive-thru, third-party delivery, and Mobile Thru.

“Like many Guests, my first interaction with the Chick-fil-A brand made a lasting impression,” said Anderson in a statement. “I admired Chick-fil-A’s signature hospitality and the ability to serve delicious food in a welcoming environment. I’m honored to bring those qualities to Erie, Lafayette and the surrounding communities with the opening of Chick-fil-A Hwy 287 & Arapahoe Rd.”

  • Born in Louisiana, Anderson first discovered Chick-fil-A while working summers at her dad’s ice cream parlor in a local shopping mall. She ate Chick-fil-A almost every day—and quickly grew to love the brand.
  • After college, Anderson started working in nonprofit leadership and corporate operations. Her interest in Chick-fil-A deepened when her father became a local Owner-Operator in 2018, inspiring her to explore a career with the brand.
  • In 2022, she joined her father’s restaurant team in Corpus Christi, Texas, and after learning the business, Anderson herself was selected to become the local Owner-Operator of Chick-fil-A Alexandria Mall in Louisiana.
  • After years of successfully leading teams in Louisiana, Anderson is excited to embark on a new journey to Colorado, where she looks forward to serving the community with care, consistency and heartfelt hospitality at Chick-fil-A Hwy 287 & Arapahoe Rd.

Anderson is committed to giving back to the Erie and Lafayette communities by:

  • Participating in the Chick-fil-A Shared Table program, which redirects surplus food to local nonprofits and has helped to create over 35 million meals to date.
  • Celebrating the opening with a $25,000 donation from Chick-fil-A, Inc. to Feeding America to support local hunger relief efforts of Weld Food Bank, a Feeding America partner food bank.
  • Recognizing 100 local heroes making an impact in the Erie and Lafayette communities by providing them with free Chick-fil-A entrées for a year.

Chick-fil-A is known for the original Chick-fil-A Chicken Sandwich.  Restaurants strive to provide a great-tasting meal made with real, whole chicken breast and fresh produce, all grown and sourced with care and prepared throughout the day.
