Fieldhouse at the Fort will open at 221 E Mountain Ave, Fort Collins, CO 80524 come late October, according to Co-Founder Andrew Campbell. The building is “a mixed-use office, condo and retail building anchored by Elevations Credit Union.”

Fieldhouse at the Fort is the brainchild of husband and wife duo Andrew and Jodi Campbell. About a year ago, the two self-proclaimed foodies left the Midwest for Fort Collins, ditching corporate America in the process. They’d always had a dream of opening their own establishment, and Fort Collins fit seamlessly into their plans. With one of their children exiting the college sphere and another entering, the timing felt right for the Campbells — especially as Andrew, who grew up working in his parents’ longtime pizza shops, had been yearning to re-enter the restaurant biz.

Fieldhouse at the Fort will offer Rhode Island-style grilled pizza. While Rhode Island pizza is typically comprised of a thick, pillowy dough topped with freshly-made tomato sauce and usually comes cheeseless, Fieldhouse at the Fort’s menu boasts incredibly inspired creations like the Chicken Little — a specialty pie topped with roasted chicken, green chili compote, fried sage leaves, and cotija cheese. Fieldhouse at the Fort will also offer hot and cold appetizers (grilled shishito peppers and a Caprese stack, for example), curated and build-your-own burgers, sandwiches, desserts, a kid’s menu, and a vast collection of strong & tart cocktails.

What Now Denver caught up with Andrew and Jodi for a few more delicious details:

WND: What menu item(s) coming to Fieldhouse at the Fort are you most excited about?

A & J: Our specialty burgers and the Rhode Island-style grilled pizza are our showcase items.

WND: What can customers expect in terms of vibe/energy/aesthetic?

A & J: It will be warm, inviting, friendly, family-oriented, fresh, clean, and comfortable with lots of light and open space.

WND: What was the name-picking process like for Fieldhouse?

A & J: Fieldhouse at the Fort was pre-selected over a year ago. The Fieldhouse on the CSU campus is the oldest athletics facility there, and “fort” is a pull from the Fort Collins military base founded locally in 1864. We chose Fort Collins specifically because of its affinity for local businesses and its vibrant dining scene.

WND: Do you have plans to open multiple locations pending Fieldhouse at the Fort’s success?

A & J: We are focused on the initial venture in full capacity. However, we will continue to evaluate future opportunities that may make sense for our model or additional models.

  • Love seeing Fort Collins eateries here. Please keep up the good work. I’m hearing rumors of a new Bark & Brew on the Northside of Fort Fun, please advise.
