Yakitori Gareji, a new yakitori-focused eatery is set to open sometime this quarter in Boulder at 2250 Pearl Street. Records show the business was granted a liquor license to sell cocktails and sake alongside traditional Japanese cuisine.
The restaurant will introduce Boulder diners to the yakitori experience — bite-sized skewered meat cooked over charcoal — with seafood, burgers, sandwiches, soups, and salads as well. Owner Troy Bush was inspired by similar concepts during his travels to Japan, the company website explains.
The restaurant’s site shows an opportunity for investors to acquire 2.5% equity in the business for a $25,000 investment, with additional perks like discounts, private event access, and food credits. Revenue projections estimate that the eatery can garner $36,900 per week in the winter and $48,300 per week in the summer when the patio is open.
It will open in the historic old Joe’s Garage building. Renovations of the property are nearing completion, with key contracting partners including Maliakai Architectural Design, Boulder Engineering Company, Rosewood Construction, Mapleto Mechanical, and Medusa Plumbing Service.
