From Pop-Up to Cafe: Bad Rabbit Coffee Bound for Industry RiNo Space

Taylor O’Doherty and Jolene Main started their business, Bad Rabbit Caravan, in an old horse trailer, which they renovated into a mobile bar and coffee shop — all black with gold trimmings. They threw a launch party in October 2024, and their business has been quite literally one party after another, catering at weddings and other events. Now, the pair have yet another reason to celebrate as they prepare to move into their first brick-and-mortar location.

Their new cafe, Bad Rabbit Coffee, is set to open in the first week of March in the INDUSTRY RiNo space on 3827 N Lafayette St.

Bad Rabbit Coffee will offer classic coffee drinks, matchas and other in-demand drinks. “Something we love is to take the feedback we get from our customers and clients and put that into practice,” O’Doherty says. Their coffee will be backed by Copper Door Coffee Roasters, a female-owned coffee roaster in Denver.

As a pop-up, Bad Rabbit prioritized fresh ingredients like syrups made in-house and fresh-squeezed juices. “We’re going to definitely hold true to that for sure, with our new brick and mortar space,” O’Doherty says. Milk alternatives will also be available at zero cost. “Everyone nowadays drinks milk alternatives, and we think it’s silly to charge people.”

While the co-owners have been serving drinks out of their mobile bar for a little over a year, they’ve been in the service industry for decades. O’Doherty has been a bartender for nearly 20 years. “It’s what I truly love,” she says. Bad Rabbit is leaving the bar aspect behind for now. However, O’Doherty eventually wants to own a cafe that turns into a bar at night. “That would be the dream,” she says.

Their years in the industry have always been in service of someone else’s business and dream. “Now we’re actually going to be able to make our dream succeed, which is incredible,” O’Doherty says.
