Bowls by KO Grows to Its Own Standalone Shop

Bowls by KO is prepping to open its first permanent restaurant at 1611 N Raleigh St in the West Colfax neighborhood, according to New Denizen. It’s a big step for the concept, which has had a stall at Avanti food hall for almost three years.

The 100% gluten-, soy-, and refined sugar-free concept began as a meal delivery service in 2019. Chef and owner Katelin Overton grew the brand from delivery to food truck to full-service catering, before at Avanti in 2022, Westword writes.

According to Voyager Denver, Overton switched from a career in corporate finance to culinary after struggling with gut health, which led her to adopt a gluten‑, soy‑, and refined sugar‑free diet and explore healthier cooking solutions.

It has a menu of grain bowls and baked goods, made with locally sourced ingredients, as well as beer and wine. The menu also features brunch dishes like kimchi fried rice and cashew milk oats, and snacks such as sweet potato fries, Brussels sprouts, and hummus plates.
