Half Eaten Cookie Hospitality unveils C Burger’s new Boulder location on Pearl Street, marking the next chapter for the regenerative burger brand that first launched at the Sanitas Brewing taproom in Englewood in June 2023. With this new home on Pearl Street, C Burger expands beyond its smashburgers, adding pasture-raised chicken, fresh salads, soft serve, and a bar program to the mix.

This isn’t your average burger joint. Every C Burger patty is made with 100% local, organic and regeneratively-raised beef from Colorado Cattle Company – the group’s own flavor-first, future-friendly regenerative beef brand that’s on a mission to flip the script on how we eat meat.

“At Corrida, we’ve spent years advocating that regenerative beef isn’t just an ideal – it’s a necessity for the future,” says Half Eaten Cookie Hospitality founder Bryan Dayton in a statement. “C Burger is where we take that idea from steakhouse indulgence to everyday craving. The world is changing, and so is the way we eat. We’re not here to preach about sustainability – we’re here to serve up great burgers that just happen to be good for the planet, too.”

The way we produce food matters, and regenerative beef can be part of a future where great burgers don’t come at the planet’s expense. Eating beef from regenerative ranches supports a food system that works with nature, not against it. Regenerative ranching improves soil health, increases water retention, and boosts biodiversity, leading to healthier land, lower emissions, and more resilient ecosystems. It allows cattle to graze naturally, restoring grasslands while reducing the need for synthetic fertilizers – all while producing more nutrient-dense, better-tasting beef. And it doesn’t stop there. Sourcing locally means supporting local economies, shortening supply chains, and ensuring fresher, more traceable meat. In short: it’s better for the planet, better for farmers, better for the cows, and better for you.

Executive Chef/Partner Samuel McCandless has crafted a menu that delivers everything you want from a burger joint – beef smashburgers cooked to crispy-edged perfection, golden fries, and just enough extras to keep things interesting. The lineup includes classics like the A Burger with American cheese, pickles, onion, ketchup, and mustard; the B Burger with American cheese, tomato, lettuce, and C Burger sauce (a mustard-forward take on Mac sauce); and the signature C Burger, which features smoked bacon, crispy jalapeños, and green chili sauce. 1% of sales from the C Burger will be donated to Zero Foodprint, a non-profit that funds regenerative farming projects. Other burger options include the B3 Burger with American cheese, smoked bacon, crispy onions and BBQ mayo and the S2 Burger piled high with Swiss American cheese, and tallow-mushroom sauce. All burgers can be made with a single or double patty, Portobello mushroom, or a veggie patty for a customizable bite.

Beyond burgers, there’s also C Bites (pasture-raised chicken nuggets served with your choice of dipping sauce) and the Fried C, a fried chicken sandwich stacked with smoked bacon, shredded lettuce, Swiss American cheese, and chipotle aioli. Complete your meal with sides like Onion Rings, Golden Potato Fries, Herbed Fries – all fried to crispy perfection in beef tallow for that savory, nostalgic flavor (McDonald’s who!?). There’s also Loaded Cheese Fries, smothered in cheese sauce, green chili, and sour cream. Even the salads hold their own, with options like the C Salad with romaine, cucumber, chickpeas, salami, mozzarella, and red wine vinaigrette; the C Caesar with kale, breadcrumbs and parmesan cheese; and the Grilled C Salad with romaine, red cabbage, tomatoes, cucumbers, red onions, carrots, croutons, and your choice of dressing (ranch, blue cheese, red wine vinaigrette, agave-lemon vinaigrette). C Burger Boulder also offers chocolate or vanilla soft serve for dessert.

The beverage program at C Burger Boulder reflects the same ethos as its food – straightforward, high-quality, and undeniably satisfying. Centered around simple, highball-style cocktails, the drinks are designed to be unfussy yet expertly crafted. Whether it’s the C Margarita (spicy or classic), the C Daly (a spiked Arnold Palmer), the CCC Ranch Water (a nod to the classic Texan libation), or the Cer Cola (an homage to the timeless Fernet-and-Coke duo), every drink keeps things easygoing and familiar. Guests can also cool off with the Frozen C, a frosty blend of spiced rum and Dr. Pepper that’s refreshingly retro. True to C Burger’s commitment to quality sourcing, the beer selection highlights local breweries alongside a few tried-and-true classics. From a crisp Prost Pilsner to a hoppy Great Divide Hazy IPA, each option is chosen to complement the menu. Wines, soft drinks, and non-alcoholic craft brews round out the offerings, ensuring there’s something for everyone.

The design of C Burger Boulder blends retro Americana elements with contemporary touches to evoke nostalgia while maintaining a fresh and inviting atmosphere. Warm wood tones and varied subway tiles create a casual yet refined aesthetic, complemented by a thoughtful mix of booth, bar, and communal seating to accommodate every type of guest. Drawing inspiration from Colorado’s natural landscape, the color palette features earthy greens, rich browns, and golden mustard hues, reflecting the brand’s commitment to sustainability. C Burger’s bar area is primed for a high-energy beverage program, complete with multiple flat-screen TVs mounted along the back wall, creating an ideal setting for guests looking to enjoy a lively social atmosphere. A custom mural at the entrance reinforces C Burger’s ethos with eye-catching graphics and a nod to regenerative beef. Designed for comfort and conversation, the dining room seats up to 70 guests inside, with additional seating for 14 on the outdoor patio.

C Burger Boulder is located at 921 Pearl Street in Downtown Boulder. It is open Sunday through Thursday from 11:00 AM to 9:00 PM and until 10:00 PM on Fridays and Saturdays.
