Cap Hill Concept to Undergo a Rebrand

Pancho Poncho will transform into Après at Govnr’s Park.

The building at 400 E. 7th Ave. in Cap Hill is welcoming a new chapter, as the Carboy Winery group gets ready to trade out concepts. Its Mexican eatery Pancho Poncho will be rebranding into a taproom called Après at Govnr’s Park, according to the Denver Post.

Apres is the result of a partnership between Carboy,  Broken Compass Brewing, Storm Peak Brewing, and Breckenridge Distillery. The business’s vision is to create a neighborhood sports bar that incorporates elements of mountain life.

While the eatery will replace Pancho Poncho, the menu will still feature some of the current favorites, an Instagram post confirmed. A sneak peek at options reveals food for all palettes, like burgers, beer-battered onion rings, a short rib French dip, and a spicy tuna or salmon bowl.

This isn’t the first restaurant rebrand the owners have done at the property. As What Now Denver reported, they operated a concept called Logan Street before swapping it out for Pancho Poncho last summer. Prior to that, the building housed Govnr’s Park for over 40 years.
