It appears that the fast casual Mediterranean restaurant, CAVA, is being planned for Denver’s 16th Street Mall. Although there is no word on when the latest addition for CAVA might open, it would be located at 1460 16th St. Mall, according to City of Denver permitting information.
The permitting information states that CAVA would renovate the space to include new decorative elements, fixtures, equipment, and lighting, among other interior items.
CAVA offers an assortment of salads, grain bowls, and pitas, as well as dips, spreads, proteins, and toppings. CAVA offers a build your own meal option that starts with a base of salad, pita, rice, and more, and then add a choice of a dip or spread including hummus, roasted eggplant, and other options. A protein can then be added along with some of your favorite toppings and your choice of dressing.
CAVA’s website lists nearly 200 locations across the U.S. including seven within the state of Colorado in Denver, Boulder, Castle Rock, and other cities.
