One of the Front Range’s popular local breweries is growing its footprint. According to the Daily Camera, Lafayette-based brewery Cellar West Artisan Ales will open a taproom and cafe in downtown Erie, at 445 Briggs St.
The business will be moving into a 100-year-old bungalow just off Main Street. It has a back patio for a beer garden and an accessory building that will be available to reserve for private rentals. Kitchen operations will be handled by Cosmic Coyote, the same culinary partner that serves scratch-made meals at the Lafayette pub.
Cellar West began in North Boulder in 2016 and relocated shortly after due to impressive traction. It was founded by Zachary Nichols, a Wisconsin native who started out as a home brewer and moved out here to help start Sanitas Brewing Company.
It has built a loyal following for its small-batch approach and traditional farmhouse ales inspired by Belgian greats. The concept’s current lineup, shown on its website, includes everything from crisp German pilsners and English-style pub ales to complex saisons and barrel-aged stouts.
