Chicago Transplants Opening Concept Inspired by Home

Chi Bites will have all the typical Midwest flavors.

Plaza 38 is finally nearing 100% occupancy of its food hall space, the company claims. Among recent additions to the property (located at 3550 W 38th Ave #98) is Chi Bites, a family-owned Chicago-style comfort food concept.

Evelyn Mata and Eduardo Martinez are the owners of the new business. They’re relocating soon from Illinois to bring the flavors here. A family member owns Sabor, a current tenant at the food hall, and encouraged them to start the venture.

Evelyn told What Now Denver they have all their licenses already, and at first, it will just be the two of them running things. The menu will showcase a lineup of Windy City staples: hot dogs, hamburgers, Italian beef, and wings, and other items may be added later on.

Chi Bites will join current tenants Sabor, Acai Alley, House 38 Cafe & Juice Bar, and Bar 38 at the property. Another incoming addition was also recently announced, called Rinconcito. What Now Denver reported that it will be a Colombian spot. Once both open, Plaza 38 will be at full occupancy.
