Chicken Concept Proposed for Congress Park

A new concept called Chicken Riot is advancing through Denver’s development review pipeline, planned for 2906 E. 6th Ave. in the city’s Congress Park neighborhood. While the team behind it won’t confirm anything, permitting and state business records show something in the works.

A tenant finish and change-of-occupancy application was submitted to convert the property at the listed address into Chicken Riot. The project involves interior renovations only, including new kitchen equipment, updated finishes, and seating, with no exterior work proposed. It used to house Truffle Cheese Shop, which recently announced its closure.

The space is listed at 658 square feet with an occupant load of 22 and 12 interior seats. Plan review documents state the team estimates approximately 70 meals served per day, with about 80% projected as carryout orders. Proposed hours are listed as Wednesday through Sunday from 11 AM to 7 PM, and closed Mondays and Tuesdays.

Application documents list Caleb Benton of Tredwell Hospitality as the owner in several places. Benton is a veteran hospitality executive with nearly two decades of experience, who is a board member of the Hispanic Restaurant Association and also recently co-opened Riot BBQ.

Benton told What Now Denver they do not “currently have any plans to open Chicken Riot” and that “permit filings in no way indicate the city will do anything in a timely or reasonable fashion.”

However, building plans were approved last week, Chicken Riot is listed on Tredwell’s website, and the brand was registered with the Colorado Secretary of State in November… so all signs point to progressing plans.
