Chimney Park Restaurant & Bar Rebuilding After Fire

The Windsor eatery will reopen next year.

Chimney Park Restaurant & Bar, located at 406 Main Street in Windsor, has announced plans to rebuild and expand the restaurant following a fire. The eatery has been closed since the blaze over the summer, and shared in a recent update that they expect to open again next year.

A fire started on the evening of June 30, spreading to the kitchen ceiling and attic, and affecting roughly 30% of the restaurant. The damages will be fixed, and a few upgrades will happen: enclosing the back patio, extending the kitchen, and enlarging both the bar area and the dining room.

Owned by Chef Jason Shaeffer and his wife, Joanna Shaeffer, the top-ranked restaurant is on the list of Distinguished Restaurants of North America, the Coloradoan reports. Chef Jason trained under famed chefs at The French Laundry in Napa Valley and Per Se in New York City.

The company has been sharing progress of the remediation efforts, sharing that replacement of the roof began last week. While an opening date hasn’t been finalized yet, Chimney Park posted that “fingers are crossed for April!”
