ChoLon Owner Creating Italian Concept at Lakehouse Residences

Renowned Denver chef Lon Symensma, who heads other popular establishments like ChoLon, LeRoux, and YumCha, has a new venture coming. It’s called Gusto, and its home will be the Lakehouse Residences at 4200 W 17th Ave. 

Symensma told What Now Denver that he and partner Christopher Davis-Massey “are thrilled to be opening Gusto! Construction should be complete by the end of the year. We will open sometime in the winter.” 

The dishes that will be featured on the menu are pizza, pasta, and Italian dishes served from a Neapolitan oven. There will also be a great happy hour featuring wine, cheese, and charcuterie boards.

Symensma debuted some of Gusto’s dishes and ideologies at a special dinner on June 13 at LeRoux. It was noted that each course had “thoughtfully curated regional wine pairings that will transport you straight to Italy.”
