Costa Vida is bringing its fresh, farm-to-fork Mexican cuisine to a second spot in Colorado Springs, city records show. This new location — at 7788 North Academy Blvd. — comes from a new franchisee, but they are not new to the brand.
Franchise owner Alexis Sewell, who started as a Shift Lead at the North Gate location two years ago and went on to become manager, will lead the new restaurant. It’s conveniently located near Chapel Hills Mall and the South Gate entrance to the Air Force Academy.
Known for making everything in-house, Costa Vida prioritizes fresh, authentic flavor. Its menu includes everything from smothered enchiladas and crisp salads to snackable nachos. The company was founded in Utah in 2003 and has grown to 94 locations.
”We focus on the details so you can focus on what matters. Our space is designed to be welcoming and familiar, creating an atmosphere for connecting over our delicious, house-made food,” the brand told What Now Denver.
