Crush Pizza &Tap, owned by Jason McGovern, is getting ready to open a second concept called Crush Wing & Tap at 5001 E Colfax Avenue.

“We’re working on finishing up some construction, and then we’ve got to go through all of the final inspections,” said McGovern when he spoke to What Now Denver on Thursday.

Fans of Crush Pizza & Tap already know about their traditional, hand-tossed, Chicago deep dish, and gluten free pizzas. While the first restaurant does have a wing selection, this new restaurant will put its focus there.

“We smoke and grill our wings, so they’re not fried,” he said. “We just wanted a place that had the focus go wings, then pizza, then beer.”

The wing menu will offer four different stylings: Their award-winning smoked and grilled, a chicken tender, seitan, and “a piggy wing like a pork shank.” The new restaurant will also add French fries to the menu, an option not found at the pizza location.

“We’ll still do pizza, but just one style instead of four. We’ll keep it hand tossed. There will be sandwiches, salads, appetizers and all that good stuff, as well.”

Crush Wings & Tap will also have a focus on the bar program, and guests can enjoy plenty of craft beer.

“We also have a lot of vegetarian and vegan options,” McGovern said. “We offer substitutions on many, if not all of our products. We also make our own vegan ranch and vegan Caesar, so we’re super vegan friendly.”

With the final touches on the building and the inspections, McGovern is hopeful to be open in October.
